Alkaline Mexican Fajitas
You’ll Love these Alkaline Fajitas!
Alkaline Fajitas are one dish I can always make alkaline…because I can control the ratios of veggies to meat and tortillas. It’s a super simple meal because I already have the veggies cut up in my salad bar box.
All that’s left to make alkaline fajitas is create the marinade (I love this one so much I always have some in the fridge or freezer), making sure I have enough time to marinade my meat (at least an hour) and then stir-frying my veggies and throwing it all together. I love to put fresh thinly shredded cabbage and fresh homemade pico de gallo on my fajitas. Did you know pico de gallo means “little rooster”? Interesting!
There are several ways to do the meat and you can use any meat you like..please choose a high-quality meat, you know, grass fed beef or free range organic chicken or grass fed pork (if you must eat pork). After you marinade the meat for at least an hour:
- Grill it on the barbie or on a skillet. The heat should be high so you quickly sear the outside, get it hot and leaf the inside a little on the pink (for beef) cook completely through for chicken or shrimp.
- Leave the meat in the marinade, put in an oven-proof pot with a tight lid and cook until tender.
- Slice your meat thin, then marinade and then stir fry with your veggies. This is a super quick way.
Important! When you stir fry your alkaline fajita veggies (and/or meat) Please, Please, Please don’t use olive oil! I know…”they” say it’s healthy and all the important chefs cook with olive oil…but what they dont’ tell you is that olive oil is damaged by high heat and becomes a toxic fat. So use olive oil for after things are cooked….over cooked veggies or on a salad or on pasta after it comes out of the water. Don’t cook with olive oil. Use grapeseed oil, avocado oil, coconut oil but not olive oil! OK?
Stir fry your veggies quickly so they still have a bit of a “crunch” to them.
