Seriously folks, when my friend Nancy and I first made this Creamy Dairy Free Cashew Alfredo Sauce we just wanted to eat the whole batch of sauce right there with a spoon.  My husband Phil loves it..so if Phil loves it anyone will!

Creamy Dairy Free Alfredo Sauce

 

  • Spiralize Zucchini (you could also grate or slice if you don’t have a spiralizer)
  • Saute zucchini, mushrooms or any other veggies you want to add.
  • Add fresh cherry tomatoes or sun dried tomatoes.
  • Top with fresh basil
  • Enjoy!

 

This Creamy Dairy Free Cashew Alfredo Sauce is a beneficial fat, and very versatile and freezes well. You can use it as an alfredo or you can thin it out and use it for a cream-based soup such as Chicken Korma or Creamy Broccoli or Cauliflower soup. It would also make a good Mac and Cheese with gluten free pasta. It’s also the base for your beef stroganoff.

Creamy Dairy Free Cashew Alfredo Sauce

  • Sautee Grass Fed Beef in Coconut Oil or a high quality olive oil.
  • Add these spices to the Creamy Dairy Free Cashew Alfredo Sauce:
  • fresh thyme
  • pinch nutmeg grated
  • ground paprika
  • cayenne pepper
  • Add the spices and Simmer sauce on low heat, add coconut milk or broth to thin.

 


This recipe could be used for Chicken Korma

Creamy Dairy Free Cashew Alfredo Sauce

For chicken Korma, add to Creamy Dairy Free Cashew Alfredo Sauce

  • Full Fat Coconut Milk to desired soup-like consistency.
  • If this is a new flavor to you … the curry powder, garam masala and red chili powder will make it spicy  adjust flavors according to your level of spice.

Add to your soup:

  • 1 tsp Coriander, powder
  • 1/2 tsp Ginger, root
  • 1/4 tsp Black pepper
  • 1 tsp raw local honey
  • 1/2 tsp Cardamom, ground
  • 1/4 tsp Cinnamon
  • 2 tsp Yellow Curry powder
  • 3/4 tsp Garam masala
  • 1/4 tsp Nutmeg
  • 1/4 tsp Red chili powder (makes it spicy)
  • 1 1/4 tsp Salt
  • 1 tsp Turmeric
    ADD: Veggies such as carrots, peas, broccoli, cauliflower
    Chunks of COOKED free range organic chicken breast

    Use for Dairy Free Mac & Cheese

    Use gluten free noodles or organic noodles if you don’t need to be gluten free.

  • Cook Gluten Free Noodles
  • Thin Creamy Dairy Free Cashew Alfredo Sauce with coconut milk to desired consistency.
  • Top with gluten free bread crumbs.
  • Bake at 350 for 15 minutes.

To Make Really Yummy Curry Sauce

Use the original Cashew Curry Recipe and add:

  • 1 1/2 teaspoons organic yellow curry sauce
  • 1 teaspoon dry oregano or 1 Tablespoon fresh oregano
  • 1 teaspoon dry cilantro or coriander – or 1 Tablespoon fresh cilantro

Build Your Really Yummy Bowl

Layers (layer in this order quinoa first, then work your way down) make it look pretty!

Smile at your food!

  • 1/2 cup cooked quinoa
  • Angel Hair shredded cabbage
  • shredded carrots
  • Sliced cucumbers
  • Sliced avocado
  • Chopped tomato or cherry tomato
  • 1/2 cup black beans
  • 1 Tablespoon black olives

Top with

  • 2 Tablespoons Really Yummy Curry Sauce
  • Pico de gallo or salsa
  • Chopped cilantro
  • Chopped green onions

Ingredients

  • 1 medium organic sweet yellow onion chopped
  • 1-2 cups water filtered
  • 3 teaspoons Organic Chicken Better Than Bouillon
  • 1/2 teaspoon fine pink Himalayan salt
  • 1/4-1/2 teaspoon red pepper flakes
  • 4 extra large garlic cloves minced
  • 1/2 cup unsalted raw cashews Soak in water overnight
  • 1-2 tablespoons real lemon juice
  • 1/4 cup Sari nutritional yeast or more to taste

Instructions

  • Soak the cashews in water overnight. This is extremely important to a creamy sauce., Drain the cashews before blending.
  • Cook the onion and 1 cup of broth over medium heat for about 8 minutes until onion is very tender (cover pan and watch so the broth doesn’t boil away before the onion is cooked. You want to be able to mash it with a fork.) Add the garlic cloves, continue cooking until all the garlic is mashable. Add broth as needed, so it doesn’t burn but the broth should be cooked out…no more liquid, just a “mashable” cooked onion and garlic.
  • Put onion & garlic in high speed blender or magic bullet.
  • Add ½ cup broth and cashews, lemon juice and nutritional yeast.
  • Blend on high until very creamy.
  • Add more broth to desired consistency and salt and red pepper or white pepper to taste. If you are making a soup thin with more broth or coconut oil to soup consistency.
  • Sauce will thicken in fridge or freezer. .
  • Thin to desired consistency with broth or coconut milk. Thicker for an Alfredo sauce, Beef Stroganoff sauce or Mac & Cheese sauce. Thinner for soup.

It is not recommended to sub or eliminate any of these ingredients, as I cannot vouch for the results if any are changed. The lemon juice is crucial, as it eliminates any cashew flavor.
Also, if you don't have a high-powered blender like a Vitamix, it is crucial to pre-soak the cashews so they soften and the sauce ends up smooth and creamy, and not gritty. Drain them and rinse after soaking.
