This is our most popular soup. It is a favorite from our Affordable Healthy Eating classes and a staple at our house. We store some in the refrigerator to eat and put some in the freezer for later. Remove from freezer, thaw in refrigerator over night, warm on stovetop and serve.
You can substitute 1-2 boxes of an organic veggie broth from Imagine, Pacific or Whole Foods 365 brand (watch for MSG words) for the Better Than Bouillon base if you like.
**You can add any of your favorite veggies and/or add a can of your favorite beans or a cup of cooked Quinoa for protein.
