Ingredients

  • 2 handfuls baby spinach or any kind of greens you like
  • 1 cup sliced watermelon
  • 1 Tablespoon sliced almonds or any type of chopped nut
  • 1/4 cup sliced red onion
  • 2 goat cheese medallions or 1 ounce goat cheese crumbles
  • 1 teaspoon Nanas Balsamic Reduction
  • 1 teaspoon good quality olive oil
  • dash Pink Himalayan or Celtic sea salt
  • dash Cayenne optional

  • Layer in a bowl in this order
  • watermelon chunks
  • sliced red onion
  • almonds
  • Drizzle olive oil and sprinkle with salt
  • Toss well
  • Put in serving dish or bowl
  • Top with Goat Cheese Medallions
  • Drizzle with balsamic reduction (you don’t need much)
