Raw Peach Cobbler

Celeste Davis (makes an 8x8 pan) This is to die for! Peaches do not turn brown and it will keep at least 3 days in the refrigerator.


Fruit Filling

  • 7 large peaches remove skins and pits
  • ½ teaspoon cinnamon
  • 1 tablespoon unrefined coconut oil Dash Celtic sea salt
  • Dash Celtic sea salt

Crumb Topping

  • ½ cup pecans
  • ½ cup cashews
  • ¼ cupatmeal flakes 1Medjool dates toasted organic oatmeal flakes
  • 1 cup Medjool dates pitted
  • 2 tablespoons unrefined coconut oil
  • ½ teaspoon cinnamon
  • 1 teaspoon almond or vanilla extract


Filling Instructions

  • Put 3 skinned and pitted peaches in your magic bullet or food processor and puree. Add cinnamon and coconut oil and salt and blend well. It should resemble baby food. Thin slice remaining skinned and pitted peaches. Pour pureed peaches over sliced peaches and stir until sliced peaches are well covered.

Crumb Topping

  • In Food Processor, using S blade, pulse dates until finely chopped. Add nuts, oatmeal, oil, cinnamon and extract and pulse until well blended but coarse (not a paste).
  • Put fruit filling in pan. Crumble topping over filling. Press topping down lightly over peaches. Cover and refrigerate.
