Grind almonds in your highspeed blender or use the pulp from homemade nut milk. You can also purchase ground almond meal but your Truffles may be a little drier.
Combine Maranatha Carmel Almond Butter and the ground almonds and mix well with a paddle mixer or by hand. Put in refrigerator to set up for about a half hour.
Form into 1 inch balls.
Sprinkle truffles with Celtic Sea salt or raw Cacao powder or roll in Raw Cacao Powder.
Store in freezer up to one month (if they last that long).
I used one cup of the pulp from my homemade almond milk. If you don’t want to make almond milk (you really should try), you can grind up ½ cup of soaked almonds and 2 medjool dates.

If you are going to grind up soaked almonds...cover 1/2 cup of almonds for 1-4 hours, drain water and grind in your high speed blender.
